Chicken Con Queso

creamy chicken with cheese casserole type dish. Easy to double recipe. Can freeze and reheat later.

4 Whole Cooked Chicken Breasts, Cubed or Shredded (or one to two whole cooked chickens)

3 Tbsp. Butter

3 Tbsp. Flour

1 Cup Sour Cream

2 oz. Diced Mild Green Chiles

1 Can Cream of Chicken Soup

2 Cups Shredded Jack Cheese

2 Cans Slice Black Olives

1 Cup Tortilla Chips - Crunched (optional)

In small saucepan, melt butter. Add flour and cook for 3 minutes. Remove from heat. Add sour cream, soup and chiles. Pour over cubed or shredded chicken in 9 x 13 baking dish. Cover with foil, bake at 350 for 30 minutes. Remove from oven, uncover and sprinkle Jack cheese over top. Return to oven uncovered for 10 minutes or until cheese is melted. Then turn up to broil til bubbling. Can sprinkle with crunched tortilla chips. I served with tortillas. FRESH ONES MADE DAILY at 21st and amidon dillons! they are awesome and cheap! 10 for $1!

Make some sangria...we used merlot-sauvignon blanc wine with some brandy and a sangria mix. ENJOY!
